There are two classes of fats that our bodies need: omega-3 and omega-6, called "fatty acids". We need both of them, but in the proper ratio. Omega-6 is very plentiful in an American diet. In fact we get too much of it from grain fed animals and the refined vegetable oils (saturated fats) that are present in almost all snack foods.
Omega-6 fatty acids are linked to abnormal inflammation and the diseases associated with it. These diseases include asthma, high cholesterol, stroke and heart attack, angina, high blood pressure, rheumatoid arthritis, and many forms of cancer.
Our bodies need unsaturated fats. These are "essential" fats because they are those fats that our bodies need, but cannot make, so we have to get them from our food.

Saturated fats are typically animal fats that are semi-solid at room temperature, but can also be refined vegetable fats such as margarine, Crisco, etc. These are listed on food labels as hydrogenated oils. Too much saturated fat intake can contribute to disease. You should always avoid eating anything with the ingredient hydrogenated oil.
Good vegetable fats are liquid at room temperature
and are called unsaturated fats, or oils. The best oil to use is
cold-pressed, extra-virgin olive oil which is an oil that has not been extracted

According to Dr. Weil, MD, director of the Program in Integrative Medicine at the U of Arizona, the two diets most associated with longevity are the traditional Japanese diet and the Mediterranean diet. Both of which are notable for their favorable omega-3 to omega-6 ratio. This is a result of a nutritional regime rich in fish, with an emphasis on vegetables, the exclusion of refined and processed foods made with vegetable oils, and a minimal reliance on meat.
Many experts believe that our ancient ancestors had a diet rich in both omega-3 and omega-6 oils, but today we don't get enough of the omega-3's. This is caused by a modern diet where people are consuming more meat than fish and less green vegetables, nuts, and legumes, which are good sources of omega-3's.
